- 30g dried longan
- 1 luo han guo (monk fruit), cracked open
- 20g dried winter melon strips
- 1.5L water
- 1 pandan leaf, knotted
- ice
👩🍳 Method
- Rinse the longan and winter melon in cold water.
- Crack the monk fruit and put the shell in too, not just the flesh — most of the sweetness is in the shell, which is why so many home versions come out thin.
- Simmer everything with the pandan for 25 min.
- Taste before adding any sugar. The winter melon and monk fruit usually make it sweet enough on their own.
- Strain, then chill it hard. Lukewarm, it tastes medicinal; ice cold, it does not.
- Serve over ice with a spoonful of the softened longan in each glass. Sold from vast steel urns on Petaling Street, which is the correct setting.
