- 700g catfish, cut into steaks, washed with hot water and salt to firm the skin
- 2 tbsp pepper soup spice (uziza, ehuru, uda, gbafilo)
- 2 scotch bonnets, blended
- 1 small onion, blended
- 1 tbsp ground crayfish
- a handful of scent leaf (efirin) or basil
- 2 stock cubes, salt
- 4 cups water
👩🍳 Method
- Rinse the catfish in hot salted water and handle it gently from here. It falls apart if you stir the pot.
- Bring the water to a boil with the blended onion, pepper, crayfish and stock cubes.
- Add the pepper soup spice and boil 5 min so it opens up before the fish goes in.
- Slide the fish in, do not stir — shake the pot instead. Simmer 12–15 min.
- Taste and correct salt and heat. It should be properly hot; this is a soup people eat when they have a cold.
- Throw the scent leaf in, cover, and cut the heat. Serve in a bowl with the broth, and drink the broth last.
