  1. Brew the coffee first and pour it into the serving glass, then stand that glass in a bowl of hot water. Egg coffee goes cold fast and the water bath is how cafés in Hanoi keep it hot while you drink.
  2. Separate the yolk cleanly. Any white that sneaks into the bowl and the foam will never thicken properly — it goes thin and bubbly instead of glossy.
  3. Whisk the yolk with the condensed milk (and vanilla, if using) hard for 3–4 minutes. An electric whisk gets there in about 90 seconds and saves your arm entirely.
  4. Keep going until it roughly triples in volume and turns pale, thick and mousse-like — lift the whisk and it should hold a soft peak. Under-whisked foam just sinks into the coffee and you have sweet coffee, not egg coffee.
  5. Spoon the foam gently over the hot coffee so it sits on top as a distinct layer. Do not pour and stir — the two layers are the entire experience.
  6. Serve immediately, still sitting in its warm water bath, with a spoon. Eat the foam off the top first, then stir what is left through the coffee.
