
🇨🇳 How to Make Fried Rice
Craving Fried Rice? On FoodNeverComes the food never actually comes — so here's how to make real Fried Rice at home, in about 15 min, with stuff you probably already have.
🛒 Ingredients

- 3 cups COLD day-old cooked rice (fresh rice = fried porridge)
- 2 eggs, beaten
- 100g ham, chicken or shrimp, diced (optional)
- ½ cup frozen peas + diced carrot
- 2 spring onions, chopped
- 1½ tbsp soy sauce + 1 tsp sesame oil
- 2 cloves garlic, chopped
- 2 tbsp neutral oil
👩🍳 Method
- Break the cold rice apart with wet hands until there are zero clumps. This 60 seconds decides everything.
- Heat 1 tbsp oil in a wok on high; scramble the eggs until just set and still glossy. Remove.
- Rest of the oil in: garlic for 10 seconds, then the meat and veg for 1–2 min.
- Rice in. Spread it flat and LET IT SIT 30 seconds to catch heat, then toss. Repeat — press, wait, toss. That's how you get toasty wok flavour without a restaurant burner.
- Soy sauce around the edge of the wok so it sizzles and toasts, then the sesame oil, then the egg back in — break it up as you toss.
- Spring onions for the last 15 seconds, done. Every grain separate, a little chewy, faintly smoky. Day-old rice forgives everything else.
