- 2–3 tbsp dark-roast coarsely ground coffee (Vietnamese robusta if you can get it)
- 2–3 tbsp sweetened condensed milk
- 1 phin filter (or a very small French press)
- boiling water, just off the boil
- a tall glass of ice
👩🍳 Method
- Spoon the condensed milk into the glass first, before any coffee goes near it. It is the base of the drink, not a topping.
- Add the coffee to the phin, level it flat, and rest the press filter on top without screwing it down hard.
- Bloom it first: pour in just 2 tbsp of hot water and wait 30 seconds for the grounds to swell. Skip this and the brew runs straight through, thin and sour.
- Top up the phin, cap it, and let it drip. It should take 4–5 minutes — if it pours through in one go, the grind is too coarse or the filter is not seated properly.
- Stir the hot coffee into the condensed milk until completely combined and glossy, with no pale streaks left.
- Fill a separate tall glass with ice and pour the sweet coffee over it. Pouring hot coffee onto ice in the mixing glass just melts it and waters the drink down.
The food never comes — but this time, you make it. 🍳
