  1. Rub the soaked beans between your palms under water and float the skins off. This takes 10 minutes and cannot be skipped — skins make akara grey and heavy.
  2. Blend the peeled beans with the onion and pepper using the absolute minimum water. The paste must be thick enough to hold a peak.
  3. Now beat the paste hard with a wooden spoon or whisk for 5 full minutes. You are whipping air in; this is what makes akara fluffy rather than a fritter.
  4. Test it: drop a small spoonful in water. It should float. If it sinks, beat longer.
  5. Salt it only now — salt added early slackens the batter.
  6. Fry spoonfuls in 170°C oil, 3–4 min a side until deep brown. Eat with bread or pap for breakfast.
