  1. If starting from beans, roast them 10 min at 160°C, rub the husks off and grind to a coarse paste.
  2. Boil the water with the cinnamon and allspice for 5 min before the cacao goes in — the spices need longer than the chocolate.
  3. Whisk in the cacao and simmer 8 min, whisking. It will not emulsify smoothly like cocoa powder; a little separation is normal.
  4. Add the pinch of pepper or chilli. It should register as warmth at the back of the throat, not heat.
  5. Sweeten to taste and froth it by pouring between two jugs from a height — that aeration is the traditional step and it changes the texture.
  6. Serve hot, with a splash of milk if you like. Toledo in the south grows the cacao, and this is far closer to the original Maya drink than anything in a tin.
