
🇧🇿 How to Make Rice and Beans

- 2 cups long-grain rice
- 1 cup dried red kidney beans, soaked overnight
- 1 can (400ml) coconut milk
- 1 onion, chopped, 3 cloves garlic
- 1 sprig fresh thyme
- ½ tsp black pepper, salt
- 2 tbsp coconut oil
- water
👩🍳 Method
- Boil the soaked beans with the onion, garlic and thyme for 45–60 min until tender but still whole. Keep the cooking liquid — it is dark, savoury and half the flavour.
- Do not drain. Measure the bean liquid and top it up with coconut milk to make 4 cups total for 2 cups of rice.
- Add the coconut oil, black pepper and a serious amount of salt. Rice and beans tastes flat if you season it like plain rice.
- Stir the rinsed rice in, bring to a boil, then drop to the lowest heat and cover tightly.
- Cook 20–25 min undisturbed. No stirring — stirring is how it turns to porridge.
- Rest 10 min off the heat, then fork through. Every Belizean Sunday is this, with stew chicken and potato salad. Note it is rice AND beans, cooked together — 'stew beans and rice' is a different plate entirely.
