
🇲🇾 How to Make Cendol

🛒 Ingredients

- 60g rice flour + 20g mung bean flour
- 300ml water + 100ml pandan juice
- a pinch of lime water (air kapur), optional but traditional
- 200g gula melaka, chopped, with a pandan leaf
- 250ml coconut milk + a good pinch of salt
- cooked red beans and shaved ice
👩🍳 Method
- Cook the flours, water and pandan juice over medium heat, stirring constantly, until it turns into a thick glossy paste that pulls from the pan.
- Press it while hot through a colander held over a bowl of iced water. The ice bath is what sets the strands — dropped into room-temperature water you get green sludge and no noodles.
- Melt the gula melaka with a splash of water and the pandan leaf into a dark syrup, strain it and chill it.
- Salt the coconut milk. Unsalted, the whole thing tastes flat and one-note sweet.
- Build: jelly noodles and red beans first, then shaved ice packed on top, then syrup, then the coconut milk poured over last.
- Stir it into a mess before eating. It is meant to be drunk as much as spooned.
