  1. Cook the flours, water and pandan juice over medium heat, stirring constantly, until it turns into a thick glossy paste that pulls from the pan.
  2. Press it while hot through a colander held over a bowl of iced water. The ice bath is what sets the strands — dropped into room-temperature water you get green sludge and no noodles.
  3. Melt the gula melaka with a splash of water and the pandan leaf into a dark syrup, strain it and chill it.
  4. Salt the coconut milk. Unsalted, the whole thing tastes flat and one-note sweet.
  5. Build: jelly noodles and red beans first, then shaved ice packed on top, then syrup, then the coconut milk poured over last.
  6. Stir it into a mess before eating. It is meant to be drunk as much as spooned.
