- 60g masa harina
- 1L water
- 1 cinnamon stick
- 90g Mexican drinking chocolate
- 60g piloncillo or brown sugar
- a pinch of salt
👩🍳 Method
- Whisk the masa harina into 300ml of the cold water until there are no lumps at all — add it to hot liquid and it will seize instantly.
- Boil the rest of the water with the cinnamon stick, then drop in the chocolate and sugar and stir until melted.
- Pour the masa mixture in through a sieve, whisking the whole time.
- Simmer gently for 10 minutes, stirring often, until it coats the back of a spoon. It thickens more as it cools.
- Froth it with a molinillo or a whisk and serve hot.
