- 9 small corn tortillas (thin ones? double up — take 18)
- 400g beef mince or chicken thigh, chopped small
- 1 onion: half chopped for cooking, half minced raw for topping
- 2 cloves garlic + 1 tsp cumin + 1 tsp smoked paprika + ½ tsp chilli or chipotle
- a big handful of fresh coriander, chopped
- 2 limes, cut in wedges
- salsa or hot sauce
- salt
👩🍳 Method
- Fry the cooking-half of the onion in a little oil for 3 min, then add garlic and spices for 30 seconds — until your kitchen smells like a taquería.
- Add the meat, break it up, and cook on HIGH until the juices evaporate and the edges start to catch and crisp, 8–10 min. Salt at the end. Crispy bits > grey mince.
- Warm each tortilla 30 seconds per side in a dry hot pan until soft and puffed in spots. Stack under a clean towel to keep warm.
- Taco math: meat first, then raw onion + coriander, then salsa. No cheese, no lettuce — this is the street style, and it's better.
- Squeeze lime over EVERYTHING. The lime is not decoration; it's load-bearing.
- Serve 3 per person and put the pan in the middle for refills — someone will want a fourth.
