- 1 whole coconut, flesh grated or cut into small chips
- 1½ cups sugar
- 1 cup coconut water or plain water
- a pinch of salt
- a few drops of food colouring (optional, traditional)
👩🍳 Method
- Crack the coconut, prise out the flesh and grate it coarsely or chop into small chips. Fresh only — desiccated will not work here.
- Put the coconut, sugar, water and salt in a wide pan and bring to a boil.
- Boil steadily, stirring now and then, for 20 min while the liquid reduces. Do not walk away for the last part.
- Watch for the moment the syrup turns cloudy and starts crystallising onto the coconut and dragging on the spoon. That is the whole trick.
- Keep stirring off the heat as it sets so the pieces stay separate and sandy rather than fusing into a slab.
- Spread on a tray to cool hard. Sold in twists of paper outside school gates, which is where most Nigerians first meet it.
