  1. Crack the coconut, prise out the flesh and grate it coarsely or chop into small chips. Fresh only — desiccated will not work here.
  2. Put the coconut, sugar, water and salt in a wide pan and bring to a boil.
  3. Boil steadily, stirring now and then, for 20 min while the liquid reduces. Do not walk away for the last part.
  4. Watch for the moment the syrup turns cloudy and starts crystallising onto the coconut and dragging on the spoon. That is the whole trick.
  5. Keep stirring off the heat as it sets so the pieces stay separate and sandy rather than fusing into a slab.
  6. Spread on a tray to cool hard. Sold in twists of paper outside school gates, which is where most Nigerians first meet it.
