
🇧🇿 How to Make Craboo Juice

🛒 Ingredients

- 3 cups craboo (nance) berries, ripe and yellow
- 4 cups water
- ¾ cup sugar, or to taste
- juice of 1 lime
- ice
👩🍳 Method
- Rinse the craboo and pick out any that are still green — underripe berries are resinous and will dominate.
- Mash them with a cup of the water using a spoon or your hands. Do not blend: the stones are hard and blending makes the whole thing bitter.
- Leave the mash to sit for 10 min so the flavour comes out into the water.
- Strain through a sieve, pressing the pulp firmly and discarding stones and skins.
- Sweeten to taste and sharpen with lime. Craboo is musky and a little cheesy on its own — the lime is what pulls it into focus.
- Serve very cold over ice. The fruit falls in season around August and the whole country smells faintly of it.
