
🇧🇿 How to Make Dukunu

- 6 ears of fresh corn, kernels cut off
- ¼ cup coconut milk
- 2 tbsp butter
- 1 tbsp sugar
- 1 tsp salt
- corn husks, soaked in warm water
- string or torn husk strips for tying
👩🍳 Method
- Cut the kernels off the cobs and grind them coarsely — a food processor in pulses, not a smooth purée. You want texture.
- Beat in the coconut milk, butter, sugar and salt. The batter should be thick and drop reluctantly off a spoon.
- Soak the husks until pliable, then pat them dry.
- Spoon batter into the centre of each husk, fold the sides over and the ends up, and tie. Leave room — the batter swells.
- Stack the parcels upright in a steamer and steam 50–60 min over gently simmering water. Top up the water; a steamer that boils dry scorches the bottom layer.
- Rest 10 min before opening. Dukunu is the sweet fresh-corn tamale, distinct from the savoury meat-filled ones — and it is best the day the corn is picked.
