- 4 pork sausages
- 4 rashers back bacon
- 2 eggs
- 2 large flat mushrooms
- 2 tomatoes, halved
- 1 tin baked beans
- 2 slices black pudding
- 2 slices bread, for frying
- butter and a little oil
- salt, black pepper
👩🍳 Method
- Start the sausages first and cook them slowly, 15 minutes, turning often. Everything else on the plate is faster than a sausage, and a sausage rushed over high heat splits and stays pink inside.
- Add the bacon, mushrooms and tomatoes around them. The mushrooms go gill-side up so they collect the fat rather than leaking their water into the pan.
- Black pudding wants 2 minutes a side, no more — it dries out fast and turns crumbly.
- Warm the beans gently in a separate pan. They go in a corner of the plate; whether they are allowed to touch anything else is a matter people hold genuine views about.
- Fry the bread in the pan fat last, once everything has flavoured it. Fresh oil makes it greasy; the accumulated fat makes it fried bread.
- Eggs last, in a spoonful of hot fat, basted rather than flipped so the yolk stays liquid — it is the sauce for the whole plate.
- Everything lands at once and hot. A full English is a question of timing, not technique.
