- 8 pork sausages
- 140g plain flour
- 4 eggs
- 200ml whole milk
- 3 tbsp beef dripping or sunflower oil
- 1 tsp salt, black pepper

👩🍳 Method
- Make the batter at least 30 minutes ahead and leave it out of the fridge. Cold batter into hot fat gives a flatter, heavier result — the temperature difference is doing real work here.
- Brown the sausages in the roasting tin on the hob first. Raw sausages put into batter steam rather than brown, and you lose the crust entirely.
- Heat the oven to 220°C and get the tin and fat genuinely smoking with the sausages in it. This is the single point where the dish succeeds or fails.
- Pour the batter in fast, all at once, around the sausages, and get it back in the oven immediately.
- Bake 30–35 minutes without opening the door. The batter should climb the sides of the tin and set crisp and hollow, with the middle still soft where the sausages sit.
- Serve straight from the tin with onion gravy. It collapses within a few minutes of coming out, so this is a dish you serve to people who are already sitting down.
