- 12 corn tortillas, small
- 1 cup refried red kidney beans, thick
- ½ cup crumbled queso fresco or grated Dutch edam
- 1 onion, finely diced and soaked in lime juice
- habanero sauce

- Fry the tortillas in shallow oil, one at a time, until crisp and rigid — 1 min a side. They must snap; a soft tortilla makes a sad garnache.
- Drain on paper and let them cool. They crisp further as they cool.
- Get the beans thick. Refry them in a dry pan if they are loose enough to run off the tortilla, which is the usual failure.
- Soak the diced onion in lime juice and a pinch of salt for 10 min. This is a quick pickle, not a raw garnish.
- Spread each crisp tortilla with beans, top with cheese, then the pickled onion.
- Finish with habanero sauce and eat immediately, standing up. Sold three for a dollar from roadside stands, and they go soggy within minutes, which is the point.
