
🇳🇴 How to Make Julebrus

🛒 Ingredients

- 500ml carbonated water, very cold
- 150ml sugar syrup (1:1 sugar and water, cooled)
- 2 tbsp lingonberry or redcurrant juice, for colour
- ½ tsp citric acid or 1 tbsp lemon juice
- 2 drops vanilla extract
- a pinch of ground cardamom
👩🍳 Method
- Chill everything first. Warm syrup knocks the fizz straight out of the carbonated water and the drink goes flat before it reaches the glass.
- Stir the syrup, fruit juice, citric acid, vanilla and cardamom together into a concentrate and taste it neat — it should be unpleasantly intense, because it is about to be diluted threefold.
- Add the concentrate to the glass first, then top with carbonated water and stir once, gently. Pouring the other way round costs you most of the bubbles.
- Serve very cold. Julebrus is Christmas soda, sold only in December, and every Norwegian brewery makes its own version — the red ones taste roughly like this and people are loyal to their local one for life.
