  1. Work the salt into the cold mince first and keep going for a minute until it turns sticky. The salt dissolves the muscle protein, and that stickiness is the only thing holding the cakes together — there are no breadcrumbs and no egg here.
  2. Beat in the starch, spices and grated onion, then add the cold milk a splash at a time, working it in fully before the next. Add it too fast and the mixture splits and weeps in the pan.
  3. Shape into large flat ovals, bigger and flatter than a meatball — the name means meat cake and the shape is the point. Fry in butter over medium heat until well browned on both sides, then set aside.
  4. Make the gravy in the same pan: melt the butter, stir in the flour and cook it until it smells like biscuits and turns the colour of weak tea. That browning is what makes it brun saus rather than a white sauce.
  5. Whisk in the stock slowly, return the cakes, and simmer 20 minutes. Stir in the brown cheese at the end if using — it adds a faint caramel sweetness that is unmistakably Norwegian.
  6. Serve with boiled potatoes, and either stewed peas or lingonberry jam.
