  1. Peel the beans as for akara — same rule, same 10 minutes.
  2. Blend with the peppers and onion to a smooth, pourable batter. Unlike akara, here you want it loose enough to pour.
  3. Beat in the oil, crayfish, crumbled stock cubes and salt. Taste it raw — it should be slightly over-seasoned, since steaming mutes it.
  4. Pour into leaf parcels or greased ramekins, filling two-thirds. Tuck a piece of egg into each.
  5. Steam over simmering water for 45–60 min. It is done when a knife comes out clean and the middle is set, not jiggly.
  6. Rest 10 min before unwrapping or it collapses. Moi moi is the same batter as akara — steamed instead of fried, which tells you a lot about Nigerian cooking.
