
🇲🇾 How to Make Murtabak
Craving Murtabak? On FoodNeverComes the food never actually comes — so here's how to make real Murtabak at home, in about 40 min, with stuff you probably already have.
🛒 Ingredients

- 4 balls of roti dough (see roti canai), or 8 sheets of spring roll pastry
- 300g minced beef or mutton
- 1 onion, finely chopped + 2 cloves garlic
- 2 tbsp curry powder
- 3 eggs, beaten, with 3 spring onions chopped in
- ghee for frying
- pickled onion and curry gravy to serve
👩🍳 Method
- Fry the onion and garlic, add the mince and curry powder, and cook it until it is properly dry. Wet filling is what makes a murtabak collapse.
- Let the filling cool completely before it goes anywhere near the pastry.
- Stretch the dough thin on an oiled surface, the same way as roti canai.
- Spoon the mince into the middle, pour over a quarter of the egg mixture, and fold the sides in like a letter. Seal the seams firmly or the egg finds the gap, escapes and burns.
- Fry in ghee over medium heat, 3 min a side, pressing lightly with a spatula until both sides are crisp and the egg is set through.
- Cut into squares and serve with pickled onions and a bowl of curry gravy to dip. A mamak stall staple, best eaten at an hour you would struggle to defend.
