  1. Steam the grated coconut with the salt for 5 min and spread it on a plate to cool. Unsteamed coconut sours within hours.
  2. Work the flour and pandan juice into a soft dough — like plasticine, not sticky.
  3. Flatten a walnut of dough, sit a piece of gula melaka in the middle, and seal it completely. One gap and the palm sugar leaks out in the water and you have boiled a hollow ball.
  4. Boil in plenty of water. They are done about a minute after they float.
  5. Lift them out wet and roll straight through the coconut so it sticks.
  6. Eat whole, in one bite, leaning over a plate. The centre is molten and it will burst — that is the entire experience and there is no dignified way to do it.
