- 8 wiener sausages (pølser)
- 8 lomper (soft potato flatbreads)
- crispy fried onions
- ketchup and Norwegian sennep (sweet mustard)
- optional: potato salad, or a second sausage per lompe
👩🍳 Method
- Simmer the sausages in water just under boiling for 6–8 minutes. Never a hard boil — the skins split and the sausage goes grainy.
- Warm the lomper briefly: a few seconds each side in a dry pan, or 10 seconds in the microwave under a damp cloth. Cold from the packet they crack when you roll them.
- Lay a sausage across the lompe, not along it, then roll. A lompe is a potato flatbread, not a bread roll — it is soft, flat and slightly sweet, and it wraps rather than holds.
- Mustard and ketchup go on before the crispy onions so the onions stay crisp.
- Eat standing up. This is what Norway eats on the 17th of May, at petrol stations, and at every hot dog stand in the country, and it is the one national dish nobody argues about.
