
🇺🇸 How to Make Pancakes

🛒 Ingredients

- 1½ cups (190g) plain flour
- 2 tbsp sugar + 2 tsp baking powder + ½ tsp salt
- 1¼ cups (300ml) milk
- 1 egg
- 2 tbsp melted butter + more for the pan
- 1 tsp vanilla (optional)
- maple syrup, enough to drown them
👩🍳 Method
- Whisk the dry ingredients in one bowl; whisk milk, egg, butter and vanilla in another.
- Pour wet into dry and stir LAZILY — stop while small lumps remain. Smooth batter = tough pancakes.
- Rest the batter 5 min while the pan heats on medium. Butter should sizzle quietly, not brown instantly.
- Ladle about ¼ cup per pancake. Don't spread it — it finds its own shape.
- Flip exactly when bubbles cover the surface and the edges look set (about 2 min). One flip only, ever.
- 45–60 seconds on side two. Stack them high, butter between layers if you're living right, syrup over everything.
