- 400g cooked cold-water prawns in the shell
- 4 thick slices of loff (soft white bread)
- good butter, softened
- Dressing: 4 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 tbsp finely chopped dill
- 1 lemon, in wedges
- salt, white pepper
👩🍳 Method
- Buy the prawns in the shell and peel them yourself. Pre-peeled prawns are washed, and washing takes the sweetness with it — this dish is three ingredients and the prawns are all three.
- Butter the bread thickly and right to the edges. The butter is a seal as much as a flavour; it stops the bread going soggy under the dressing.
- Mix the mayonnaise with the lemon juice and dill and season. Keep it loose enough to spoon, not pipe.
- Pile the prawns on the bread — properly pile them, so the bread disappears — and spoon the dressing over.
- Black pepper, a wedge of lemon, and eat it outdoors. On the Oslofjord this is eaten on the boat with the shells going straight over the side.
