- 300g plain flour
- 1 tbsp condensed milk
- 1 egg
- 150ml warm water
- 1 tsp salt
- plenty of ghee or margarine, plus more for frying
- dhal or fish curry to dip
👩🍳 Method
- Mix everything into a soft, slightly sticky dough and knead 10 min until smooth.
- Divide into 6 balls, coat each one generously in oil, and rest them covered at least 4 hours. Overnight is better. The rest is the whole recipe — an unrested dough will tear every single time you try to stretch it.
- On a well-oiled surface, press a ball flat and then stretch and slap it outwards until it is thin enough to read through. Holes are survivable; thick is not.
- Fold the edges into the centre to make a rough square, keeping the layers loose rather than pressing them together.
- Fry in ghee over medium heat, 2 min a side, until deep gold and crisp in patches.
- Straight off the pan, clap it between your palms a few times to shatter the layers apart. Serve with dhal, and eat it with your hands.
The food never comes — but this time, you make it. 🍳
