
🇧🇿 How to Make Seaweed Shake

- 1 cup dried Irish moss (sea moss), rinsed very well
- 1 can (400ml) evaporated milk
- 1 can (400ml) condensed milk
- 1 tsp vanilla
- 1 tsp grated nutmeg
- ½ tsp cinnamon
- 1 cup water
- ice
👩🍳 Method
- Rinse the dried seaweed under running water at least four times, picking out sand and shell. Under-rinsed sea moss tastes like the sea, which nobody wants in a milkshake.
- Soak it in cold water for 4 hours until it swells and softens and turns pale.
- Simmer it in fresh water for 15 min until it dissolves into a thick, clear gel. It will look like nothing appetising at this stage.
- Blend the gel smooth with the evaporated milk, condensed milk, vanilla and spices.
- Chill hard, then blend again with ice just before serving — it thickens as it sits and needs loosening.
- Serve very cold with extra nutmeg grated over. It is sold as a health and stamina drink across Belize, with claims attached that this recipe makes no comment on.
