
🇳🇴 How to Make Solbærtoddy

🛒 Ingredients

- 6 tbsp blackcurrant syrup (solbærsirup)
- 500ml water
- 1 cinnamon stick
- 2 thin slices of lemon
- optional: a star anise
👩🍳 Method
- Heat the water with the cinnamon and star anise to a bare simmer and hold it 5 minutes so the spice has time to give something up.
- Take it off the heat before adding the syrup. Boiled blackcurrant turns dull and slightly stewed, and the point of solbærtoddy is that bright sharp edge.
- Stir in the syrup, taste, and adjust — it should be tart enough to make you blink, not squash-sweet.
- Pour into glasses through a strainer, add a lemon slice, and drink it hot.
- This is what Norwegian children are given when they come in from the snow, and what adults drink with a cold. The alcoholic version exists; this is not it.
