🛒 Ingredients

- 150g plain flour
- 1 tsp baking powder + ½ tsp bicarbonate of soda
- 1 egg
- 250ml water or milk
- 2 tbsp sugar + a pinch of salt
- Filling: 100g crushed roasted peanuts mixed with 3 tbsp sugar, tinned sweetcorn, butter
👩🍳 Method
- Whisk the batter smooth, then rest it 30 min. The rest is what gives you the lacy holes; a fresh batter fries up flat and closed.
- Heat a small greased pan over medium, pour in a ladle and swirl it up the sides slightly.
- Sprinkle a spoon of sugar over the wet surface immediately — it melts into the crust as it sets.
- Cover and cook 2–3 min without touching it, until the top is dry and covered in open holes.
- Butter generously, then peanuts and corn over one half only.
- Fold it over, press, and cut into wedges. Crisp thin edge, thick soft middle — a slice with both is the correct slice.
