👩‍🍳 Method

  1. Whisk the batter smooth, then rest it 30 min. The rest is what gives you the lacy holes; a fresh batter fries up flat and closed.
  2. Heat a small greased pan over medium, pour in a ladle and swirl it up the sides slightly.
  3. Sprinkle a spoon of sugar over the wet surface immediately — it melts into the crust as it sets.
  4. Cover and cook 2–3 min without touching it, until the top is dry and covered in open holes.
  5. Butter generously, then peanuts and corn over one half only.
  6. Fold it over, press, and cut into wedges. Crisp thin edge, thick soft middle — a slice with both is the correct slice.
The food never comes — but this time, you make it. 🍳
