👩‍🍳 Method

  1. Make the pickle first: dissolve the sugar and salt in the warm water and vinegar, add the carrot and daikon, and leave at least 15 min. It should taste sharp AND sweet — this is the entire balance of the sandwich.
  2. Warm the baguettes in a hot oven for 4–5 min until the crust crackles, then let them cool for 2 min. Warm-but-not-hot is the goal; trapped steam turns the crumb chewy.
  3. Split lengthways leaving a hinge, and pull out a little of the soft interior so the filling has somewhere to sit instead of squeezing out.
  4. Pâté on one side, mayo on the other, edge to edge. Do not go light here — this is not a health sandwich.
  5. Layer in the pork, then a generous pile of pickle squeezed free of liquid, then cucumber, coriander and chilli.
  6. Dash the Maggi seasoning straight onto the bread before closing, press the whole thing firmly shut, and eat immediately.
The food never comes — but this time, you make it. 🍳
