- 3 cups milk, frozen in ice-cube trays (do this the night before)
- 4 tbsp condensed milk, plus more for drizzling
- 2 tbsp red bean paste (optional but classic)
- fresh fruit: strawberries, mango, banana
- mochi bits or rice cakes, cubed
- a few crushed nuts or misugaru powder (optional)
👩🍳 Method
- Freeze the milk in cube trays at least 6 hours ahead — milk ice is what makes bingsu creamy instead of crunchy.
- Blitz the frozen milk cubes in a strong blender or food processor in short pulses until it turns into fluffy snow. Don't over-blend into a smoothie.
- Work fast: pile the milk snow high in chilled bowls.
- Drizzle generously with condensed milk — this is not the moment for restraint.
- Top with red bean paste, fruit and mochi bits.
- Serve with two spoons and an agreement about who gets the last strawberry. It melts fast — eat faster.
The food never comes — but this time, you make it. 🍳
