  1. Boil the noodles 6–7 min until springy, drain, rinse in cold water, and snip a few times with scissors — full-length noodles are a workout to eat.
  2. Toss the warm noodles with HALF the sauce right away so they drink it in while you cook the rest.
  3. Blanch the spinach 30 sec, squeeze dry, season with a pinch of salt and sesame oil.
  4. Stir-fry the carrot and onion 2 min until just softened; then the beef (or mushrooms) with the garlic until browned.
  5. Everything into one big bowl with the remaining sauce; toss with your hands (gloves or clean hands — a spoon can't do it justice).
  6. Taste: it should be sweet-savoury and glossy. More soy if flat, more sugar if sharp. Finish with sesame seeds and egg ribbons if using. Serve warm or room temp — japchae is famously good both ways.
