  1. Season the warm rice with sesame oil and salt; let it cool to just-warm. Hot rice makes the nori shrivel.
  2. Lay nori shiny-side DOWN. Spread a thin, even layer of rice over ¾ of the sheet — thin is the skill here; thick rolls burst.
  3. Line up your fillings in one neat row across the middle: radish, carrot, spinach, egg, ham/tuna.
  4. Roll from the rice end, tucking the fillings in with your fingers on the first turn — that first tuck decides everything. Keep it TIGHT.
  5. Seal the bare nori edge with a dab of water. Rub the finished roll with a little sesame oil so it gleams.
  6. Cut with your sharpest knife, wiping the blade with a wet cloth between cuts — a sticky knife squashes the rolls. Aim for 1.5cm coins.
