👩‍🍳 Method

  1. Choose plantains that are almost too ripe. A yellow plantain roasts to something starchy and disappointing.
  2. Roast them whole in their skins over charcoal, or in a 220°C oven, turning every 5 min.
  3. They are ready when the skin is blackened and splits and the flesh gives completely to a squeeze — 20 min or so.
  4. Peel while hot. The blackened skin should lift away in one piece.
  5. Mix the groundnut paste with cayenne and salt, loosening with a spoon of hot water to a drizzle.
  6. Serve the plantain torn open with the sauce and a handful of roasted groundnuts. Boli and groundnut is what Lagos eats standing up, on the way home.
