
🇳🇬 How to Make Boli

🛒 Ingredients

- 2 large plantains, very ripe — the skin should be black-blotched, not yellow
- Sauce: 2 tbsp groundnut paste
- 1 tsp cayenne
- a pinch of salt
- roasted groundnuts, to serve
👩🍳 Method
- Choose plantains that are almost too ripe. A yellow plantain roasts to something starchy and disappointing.
- Roast them whole in their skins over charcoal, or in a 220°C oven, turning every 5 min.
- They are ready when the skin is blackened and splits and the flesh gives completely to a squeeze — 20 min or so.
- Peel while hot. The blackened skin should lift away in one piece.
- Mix the groundnut paste with cayenne and salt, loosening with a spoon of hot water to a drizzle.
- Serve the plantain torn open with the sauce and a handful of roasted groundnuts. Boli and groundnut is what Lagos eats standing up, on the way home.
