
🇳🇬 How to Make Chin Chin

🛒 Ingredients

- 4 cups plain flour
- ½ cup sugar
- ¾ tsp grated nutmeg
- ½ tsp salt
- 100g butter, cold and cubed
- 2 eggs
- ½ cup evaporated milk
- oil for deep frying
👩🍳 Method
- Rub the butter into the flour, sugar, nutmeg and salt until it looks like breadcrumbs.
- Beat the eggs with the milk and bring the dough together. Knead only until smooth — 3 min. Overworked chin chin turns hard rather than crisp.
- Rest the dough 15 min covered, then roll out to 3–4 mm. Thinner is crunchier; thicker gives you the soft-centre style. Pick a side.
- Cut into small squares with a knife or pastry wheel. Separate them so they do not fuse in the oil.
- Fry at 160°C — lower than you think. Hot oil browns the outside while the inside stays raw, which is how chin chin ends up chewy.
- Fry 5–6 min to an even gold, drain thoroughly and cool completely before storing. It keeps a fortnight in a sealed tin, in theory.
