  1. Rub the butter into the flour, sugar, nutmeg and salt until it looks like breadcrumbs.
  2. Beat the eggs with the milk and bring the dough together. Knead only until smooth — 3 min. Overworked chin chin turns hard rather than crisp.
  3. Rest the dough 15 min covered, then roll out to 3–4 mm. Thinner is crunchier; thicker gives you the soft-centre style. Pick a side.
  4. Cut into small squares with a knife or pastry wheel. Separate them so they do not fuse in the oil.
  5. Fry at 160°C — lower than you think. Hot oil browns the outside while the inside stays raw, which is how chin chin ends up chewy.
  6. Fry 5–6 min to an even gold, drain thoroughly and cool completely before storing. It keeps a fortnight in a sealed tin, in theory.
