
🇧🇿 How to Make Coconut Tart

🛒 Ingredients

- Pastry: 2 cups plain flour
- 120g cold butter, cubed
- 2 tbsp sugar + ½ tsp salt
- 4 tbsp iced water
- Filling: 2 cups freshly grated coconut
- ¾ cup sugar
- ½ cup coconut milk
- 1 tsp vanilla + ½ tsp grated nutmeg
- 1 tbsp butter
👩🍳 Method
- Rub the butter into the flour, sugar and salt, add the iced water and bring together without kneading. Chill 30 min.
- Cook the grated coconut with the sugar, coconut milk, nutmeg and butter over a low heat for 12–15 min, stirring, until thick and sticky and pulling away from the pan.
- Stir the vanilla in off the heat and let the filling cool completely. Hot filling melts the pastry and you get a soggy base.
- Roll the pastry thin and cut discs. Put a spoon of filling on each, fold into a half-moon and crimp the edge.
- Cut a small vent in the top of each so steam escapes.
- Bake at 190°C for 20–25 min until golden. Also sold as 'tableta' in some places; the folded turnover version is the Belize City one.
