
🇳🇬 How to Make Efo Riro

🛒 Ingredients

- 500g efo shoko or spinach, chopped and blanched
- ½ cup palm oil
- 1 onion, sliced, plus 2 red bell peppers + 2 scotch bonnets blended and reduced
- 200g assorted beef, tripe or shaki, pre-boiled
- 150g smoked fish or ponmo
- 2 tbsp ground crayfish
- 1 tbsp locust bean (iru), optional but correct
- salt and a stock cube
👩🍳 Method
- Blanch the greens 60 seconds, drain and SQUEEZE them dry. Wet greens water the whole pot down.
- Reduce the blended pepper on the stove until thick — 10 min. Nigerian soups almost always start here.
- Heat the palm oil, fry the sliced onion, add the iru and let it perfume the oil for a minute.
- Add the reduced pepper and fry 8–10 min until the oil separates and floats on top.
- Stir in the meats, fish and crayfish. Simmer 5 min so they take on the sauce.
- Fold the greens in last and take it off the heat within 3 minutes. Efo riro should be a stew holding greens, not a pot of boiled vegetables.
