
🇧🇿 How to Make Fry Jacks

- 2 cups plain flour
- 1 tbsp baking powder
- 1 tsp salt
- 2 tbsp shortening or butter, cold
- ¾ cup water or coconut milk
- oil for frying
- refried beans, cheese, jam or honey, to serve
👩🍳 Method
- Whisk the flour, baking powder and salt, then rub in the fat until it looks like coarse meal.
- Add the liquid and bring together into a soft dough. Knead lightly for 1 min only — fry jacks want to be tender, and kneading builds the gluten that makes them tough.
- Rest the dough, covered, for 15 min. This matters more than it sounds; unrested dough shrinks back and will not puff.
- Roll out to about 5 mm and cut into triangles. Slash a small vent in the middle of each.
- Fry in 180°C oil. They should balloon within seconds. If they do not puff, the oil is too cool.
- Turn once, drain, and serve hot for breakfast with refried beans and cheese, or with jam. Cold fry jacks are just bread.
