  1. Layer the sweet preserves in the bottom of a tall glass. Halo-halo means 'mix-mix' and the layers exist to be destroyed.
  2. Pack shaved ice on top, right to the rim. Shaved, not cubed — crushed ice makes it watery.
  3. Pour the evaporated milk over the ice slowly so it soaks down through.
  4. Top with the ube halaya, a slice of leche flan and the ice cream.
  5. Pinipig over the top for crunch.
  6. Hand it over with a long spoon and instructions to stir it into chaos before eating. That is genuinely the correct way.
