
🇵🇭 How to Make Tapsilog
Craving Tapsilog? On FoodNeverComes the food never actually comes — so here's how to make real Tapsilog at home, in about 20 min + curing, with stuff you probably already have.
🛒 Ingredients

- 400g beef sirloin, sliced thin
- 4 tbsp soy sauce
- juice of 3 calamansi or 1 lemon
- 4 cloves garlic, crushed
- 1 tbsp brown sugar
- 2 cups garlic fried rice (sinangag)
- 2 eggs, fried sunny side up
- vinegar dip
👩🍳 Method
- Marinate the beef in the soy, citrus, garlic and sugar. Overnight is standard.
- Tapsilog is a portmanteau: TAPa, SInangag, itLOG — cured beef, garlic rice, egg. All three or it is not tapsilog.
- Fry day-old rice hard with a lot of chopped garlic until the grains separate and toast.
- Fry the beef in a very hot pan in a single layer, 1–2 min a side, until the sugar caramelises at the edges.
- Fry the eggs so the yolk stays runny — it becomes the sauce.
- Plate all three side by side with a saucer of spiced vinegar. Breakfast, and often dinner.
