
🇵🇭 How to Make Sinigang
Craving Sinigang? On FoodNeverComes the food never actually comes — so here's how to make real Sinigang at home, in about 45 min, with stuff you probably already have.
🛒 Ingredients

- 600g pork belly or ribs
- 1 packet sinigang tamarind mix, or 200g fresh tamarind pulp
- 1 onion, quartered
- 2 tomatoes, quartered
- 1 daikon, sliced
- 100g green beans
- 1 aubergine, sliced
- a bunch of water spinach (kangkong)
- 2 long green chillies
👩🍳 Method
- Simmer the pork with the onion and tomatoes in 1.5L water for 30 min, skimming.
- Add the tamarind and the daikon, cook 10 min.
- Add the aubergine and beans, then the greens and chillies for the last 3 min only.
- The broth should be aggressively, almost startlingly sour. That is the whole identity of sinigang — if it tastes balanced, add more tamarind.
- Season with fish sauce, not salt.
- Serve with a bowl of plain rice and a saucer of fish sauce with crushed chilli for dipping.
