
🇬🇧 How to Make Horlicks

- 3 heaped tsp Horlicks malted powder
- 300ml whole milk
- a little cold milk, for mixing
- sugar, if you must
👩🍳 Method
- Mix the powder to a smooth paste with two tablespoons of cold milk first. Tipped straight into hot milk it clumps and no amount of stirring recovers it.
- Heat the rest of the milk to just below a simmer. Boiled milk forms a skin and picks up a scorched note that fights the malt.
- Pour the hot milk onto the paste slowly, whisking, and it comes together smooth.
- Drink it hot, last thing. A malted milk drink from Victorian Britain, originally sold as an infant food and now firmly a bedtime one.
