- 2 cups cooked short-grain rice, still warm
- 1 tsp sesame oil + ½ tsp salt (for the rice)
- 4 sheets gimbap nori
- 1 carrot, in thin strips, quickly stir-fried
- 2 handfuls spinach, blanched and squeezed
- 2 eggs, made into a thick omelette and sliced into strips
- 4 strips pickled yellow radish (danmuji — the crunchy soul of gimbap)
- ham or canned tuna with a little mayo (optional)
- extra sesame oil for shining the rolls
👩🍳 Method
- Season the warm rice with sesame oil and salt; let it cool to just-warm. Hot rice makes the nori shrivel.
- Lay nori shiny-side DOWN. Spread a thin, even layer of rice over ¾ of the sheet — thin is the skill here; thick rolls burst.
- Line up your fillings in one neat row across the middle: radish, carrot, spinach, egg, ham/tuna.
- Roll from the rice end, tucking the fillings in with your fingers on the first turn — that first tuck decides everything. Keep it TIGHT.
- Seal the bare nori edge with a dab of water. Rub the finished roll with a little sesame oil so it gleams.
- Cut with your sharpest knife, wiping the blade with a wet cloth between cuts — a sticky knife squashes the rolls. Aim for 1.5cm coins.
- Eat the ugly end pieces yourself immediately. Cook's tax.
The food never comes — but this time, you make it. 🍳
