  1. Soak the grain overnight until swollen and soft enough to crush between your fingers.
  2. Blend the soaked grain with the ginger, cloves and sweet potato and about 3 cups of water until completely smooth.
  3. Strain through muslin or a fine sieve, wringing hard. Discard the chaff.
  4. Divide the strained liquid: boil two-thirds, keep one-third cold and raw.
  5. Pour the cold raw third into the boiling pot while stirring hard and fast. This flash-cooks it into a smooth, drinkable slurry — pour slowly and you get lumps.
  6. Sweeten, cool, and chill. Kunu is served cold and thin enough to drink from a glass, not spooned.
