
🇹🇷 How to Make Lokum
Craving Lokum? On FoodNeverComes the food never actually comes — so here's how to make real Lokum at home, in about 1 hr + setting, with stuff you probably already have.
🛒 Ingredients

- 600g sugar
- 400ml water, plus 200ml more
- 1 tbsp lemon juice
- 80g cornflour
- 1 tsp cream of tartar
- 1 tbsp rosewater
- icing sugar and more cornflour to coat
👩🍳 Method
- Boil the sugar, 400ml water and lemon juice to 118°C. Use a thermometer — this one genuinely needs it.
- Separately whisk the cornflour and cream of tartar into the other 200ml water and cook, stirring, until it becomes a thick paste.
- Pour the hot syrup into the paste very slowly, whisking hard the whole time.
- Now simmer on the lowest heat for 45 min, stirring often. It turns from cloudy white to pale gold and thick enough to hold a trail.
- Stir in the rosewater, pour into an oiled tin and leave uncovered overnight. Do not refrigerate.
- Cut into cubes with an oiled knife and toss in equal parts icing sugar and cornflour.
