- 400g pork mince
- 1 carrot, very finely diced
- 1 onion and 4 cloves garlic, minced
- 2 spring onions
- 1 egg
- 1 tbsp soy sauce
- 30 spring roll wrappers
- oil for frying
- sweet chilli sauce
👩🍳 Method
- Mix the pork with the vegetables, egg, soy and plenty of pepper.
- Fry a teaspoon of the mix to taste it for seasoning before you roll thirty of them.
- Lay a wrapper as a diamond, put a thin line of filling near the bottom corner — much less than you think — and roll tightly, folding the sides in.
- Seal the final corner with water. Lumpiang Shanghai should be thin and pencil-like, not fat.
- Fry at 170°C for 4–5 min until deep gold and cooked through.
- Cut on the diagonal and serve with sweet chilli. They freeze raw beautifully.
The food never comes — but this time, you make it. 🍳
